If served dry (steamed or fired), dumplings may use any dipping sauce, just like pierogi. One old recipe of sauce is based on dark vinegar. Some additional ingredients can be added to fit your preference, such as diced ginger and/or garlic. Hot sauce is popular too. Pure sugar, or no sauce at all, is also an option.
