Apollo is the first cookbook dedicated to Frederik Bille Brahe’s restaurant-museum in Copenhagen. It includes 104 recipes, created together with chef Yuta Kurahashi, that fuse Danish cuisine with Japanese, French and Italian influences. More than a collection of recipes, the book reflects a universe where gastronomy, art and design coexist naturally. Frederik Bille Brahe, a Copenhagen-based chef, is the founder of Atelier September and Apollo.
